  • 4 cups arugula
  • 1/2 cup dried cranberries
  • 1/4 cup walnuts chopped
  • 1 apple sliced
  • 1/4 cup salad dressing of choice


  • In a medium-sized bowl, toss together the arugula, cranberries, walnuts and apple slices. Drizzle with ¼ cup of your favorite salad dressing.


Chef’s Note: Lightly toast the walnuts before adding to the salad for more flavor.
Kid-Friendly Option: If your children are wary of salad greens, try a more kid-friendly lettuce such as romaine that has more crunch to it and a lighter green color.
