Roasted Broccoli

Roasted broccoli is a nice change of pace rather than the usual steaming and gives the broccoli a sweeter, almost nutty character.

Ingredients
  

  • 2 heads broccoli roughly chopped
  • 1 Tbsp extra-virgin olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper

Instructions
 

  • Preheat oven to 400°F. Coat a baking sheet with cooking spray.
  • In a large bowl combine broccoli, olive oil, salt and pepper. Stir well to coat the broccoli evenly.
  • Spread in a single layer on baking sheet and roast in the oven for about 20 minutes or until browned.
