Ingredients
  • 1 1/4 lb lean ground turkey
  • 1/2 cup old-fashioned oats
  • 1/2 cup finely chopped onion
  • 1/2 1-oz packet ranch dressing/dip seasoning mix (about 1 1/2 Tbsp)
  • 1 egg
  • Ketchup (as needed) for recipe analysis used ¼ cup

Instructions
  1. Preheat oven to 375 degrees F. Spray a 12-cup muffin tin generously with non-stick spray.
  2. In a large bowl, mix all of the ingredients, except the ketchup.
  3. Fill each muffin tin with the meat mixture to about 3/4 full and smooth out the tops.
  4. Squirt a dab of ketchup on top of each muffin and spread evenly over muffin top with a spoon.
  5. Bake until lightly browned on the edges for about 30 to 35 minutes.

Chef’s Tips:

  • Double this recipe when you are making it so you can cook and freeze some for a hectic night when you need dinner fast.
  • To cut time making dinner in the evening, prepare these in the morning, put the meat mixture in the muffin tins, cover with saran wrap and store in the refrigerator. In the evening, just pull out of the refrigerator and bake.
