Ingredients
  • 2 tsp extra-virgin olive oil
  • 1 14- oz package firm tofu, drained and cubed
  • 1 1/2 cups frozen corn kernels, thawed
  • 1 red pepper, diced
  • 1/4 tsp chili powder optional
  • 1/4 cup reduced sodium soy sauce
  • 1 tsp balsamic vinegar
  • 1 romaine lettuce heart, washed and separated into leaves
  • 2 avocados, sliced

Instructions
  1. In a nonstick skillet, heat oil over medium-high heat. Add the tofu and break into very small pieces. Cook for several minutes, until most of the liquid is gone and tofu starts to turn golden in color.
  2. Add the corn and the peppers to the pan. Cook for 5 minutes then add the chili powder and soy sauce. Continue to cook until most of the liquid has been absorbed. Turn off the heat and stir in the balsamic vinegar.
  3. Spoon tofu mixture onto a romaine lettuce leaf and top with avocado.
Recipe Notes

Kid-Friendly Idea: Serve tofu mixture over rice or in a tortilla rather than on the lettuce leaf if that is more appealing to your children (or spouse!).
