Ingredients
  • 1 bag baby kale
  • 1/2 cup caramelized pecan pieces, store bought or see recipe below
  • 4 oz goat cheese
  • 1 medium red onion, thinly sliced into rings
  • 4-6 radishes, washed, dried, and thinly sliced into discs
  • 1/4 cup dried cranberries

Instructions
  1. Over medium heat in a non-stick pan, gently roast the pecans and then add a tablespoon of brown sugar and a little water, stirring the pecans constantly to keep them from sticking together. Remove from heat and cool.
  2. Place kale in a medium sized mixing bowl. Add onion and radishes to kale. Sprinkle the Craisins, caramelized pecans and goat cheese over salad.
  3. Toss with Honey Balsamic Vinaigrette or dressing of your choice.
