Ingredients
  • 8 ounces whole wheat linguine
  • 1 lb medium shrimp, shelled and deveined
  • 2 Tbsp extra-virgin olive oil
  • 3 Tbsp butter
  • 1 1/2 Tbsp minced garlic
  • 1/2 cup dry white wine
  • 2 Tbsp fresh parsley, chopped
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 lemon

Instructions
  1. Cook linguine according to package directions.
  2. Heat a large pan over medium heat and add the butter and olive oil. Once the butter has melted, add the garlic to the pan and cook for about a minute until it begins to brown slightly.
  3. Add the shrimp and wine to the pan. Stir together. Cook for about 2 to 3 minutes, letting the sauce boil. Turn the shrimp over and continue to cook for another minute or until the shrimp are cooked through.
  4. Remove the pan from the heat. Cut the lemon in half then squeeze the juice from each half into the pan. Sprinkle with parsley, salt and pepper. Stir well.
  5. Serve over whole wheat linguine.
Recipe Notes

 Chef’s Note:

  • If you’d rather not serve pasta, you could serve crusty bread or rice instead with the shrimp.
  • Sometimes you may not want to open a whole bottle of wine for a meal. One way around this is to buy the mini-bottles of wine that you can find in the wine section of most major supermarkets.
  • We suggest using fresh parsley, not dried parsley, for this recipe.
