Ingredients
  • 3 cups uncooked bow tie pasta about 8 oz
  • 1/3 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp stone ground mustard
  • 2 tsp sugar
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 1/2 tsp rice vinegar
  • 2 cups diced cooked chicken
  • 1 1/2 cups seedless red grapes halved
  • 2 celery stalks thinly sliced
  • 1/3 cup diced red onion
  • 1/3 cup Chopped walnuts toasted (optional)
  • 2 Tbsp chopped fresh parsley optional

Instructions
  1. Cook pasta according to package directions. Drain and allow to cool completely.
  2. In a large bowl, combine orange juice, lemon juice, olive oil, mustard, sugar, salt, pepper and rice vinegar. Whisk together well.
  3. Add cooked pasta, chicken, grapes, celery, red onion, walnuts, and parsley. Toss gently to combine. Refrigerate until ready to serve.
