Ingredients
  • 1 small butternut squash, peeled, strings and seeds removed, cubed
  • 1 Tbsp extra-virgin olive oil
  • 1/4 tsp kosher salt

  1. Preheat oven to 425 degrees F.
  2. Place butternut squash on a rimmed baking sheet. Drizzle with olive oil and salt. Toss well to combine then spread out in a single layer and roast until browned, about 25 minutes.
Recipe Notes

Simplify It: Buy your butternut squash already cut in the produce section of most major supermarkets.

Chef's Note: If you have any extra onion, cut it into large chunks, mix in with the butternut squash and roast together.
