Ingredients
  • 12 oz whole-wheat linguine pasta
  • 1 15-oz can Italian style diced tomatoes with liquid
  • 1 15-oz can no salt added garbanzo beans, drained
  • 3 cups broccoli florets cut into bite-sized pieces
  • 1 medium sweet onion, thinly sliced
  • 2 tsp minced garlic (about 2 cloves)
  • 2 tsp dried oregano leaves
  • 4 1/2 cups low sodium vegetable broth
  • 1 Tbsp extra-virgin olive oil
  • 1/4 tsp ground black pepper
  • 12 basil leaves, roughly chopped
  • 1/2 cup Parmesan cheese, grated

Instructions
  1. Place pasta, tomatoes, beans, broccoli, onion, and garlic in a large stock pot. Pour in broth and sprinkle with oregano. Drizzle the olive oil on top.
  2. Cover the pot and bring to a boil. Reduce the heat to low and simmer covered for about 10 minutes, stirring occasionally. Cook until almost all of the liquid has evaporated, leaving about an inch or so in the bottom.
  3. Season with pepper. Add the basil leaves and Parmesan cheese and stir well to combine. Serve with additional Parmesan cheese as desired.
