Ingredients
  • 6 cups chopped kale leaves
  • 1/4 cup your favorite vinaigrette dressing
  • 1/4 cup Crumbled blue cheese
  • 1 avocado, diced
  • 1/4 cup pine nuts

Instructions
  1. Put the kale in a large bowl. Pour your vinaigrette dressing over the kale. Toss well to combine. Massage gently with your hands or let it sit about 10 minutes to tenderize the kale.
  2. Add blue cheese crumbles, avocado and pine nuts. Toss gently to combine and serve.
Recipe Notes

Nutrition Nugget: While this salad has more fat in it that you might expect, a good portion of that is from healthy fats in the avocado and pine nuts. Choosing an olive oil-based vinaigrette also contributes healthy fats.
