Ingredients
  • 6 cups baby kale
  • 1/4 cup reduced fat Caesar salad dressing
  • 1/4 cup shaved Parmesan cheese
  • 1/2 cup croutons

  1. Place the kale and the dressing in a bowl. Massage the dressing into the kale and let it sit for at least 15 minutes. Add Parmesan and croutons just before serving, tossing well.
Recipe Notes

Mix It Up: Although this is not traditional for a Caesar salad, you could toss in some chopped cherry tomatoes or even some dried cranberries. Get creative!

Kid-Friendly: If your kids are not fans of kale, use traditional Romaine lettuce that is super crispy and light.
