Dressing Ingredients
  • 1 1/2 Tbsp miso paste
  • 2 Tbsp rice vinegar
  • 1 Tbsp honey
  • 1 Tbsp ginger, minced
  • 1 Tbsp sesame oil
  • 1 1/2 tsp lime juice
  • 1 tsp sesame seeds
Salad Ingredients
  • 6 cups romaine lettuce
  • 1 cup shoestring carrots
  • 1 cup cucumbers, sliced
  • Sesame sticks optional

Dressing instructions
  1. Whisk together miso paste and rice vinegar in a medium sized bowl until thoroughly combined. Stir in honey, ginger, sesame oil, lime juice, and sesame seeds.
Salad instructions
  1. Place salad ingredients in a large bowl. Add dressing and toss until thoroughly combined.
Recipe Notes

Chef’s Notes:  Miso paste can be found in most major grocery stores in the refrigerated section. We prefer white miso paste in this dressing. 

Mix It Up:

  • Use this dressing on top of steamed vegetables like sugar snap peas, broccoli, edamame, etc. to jazz them up.
  • Another great variation for this salad is to use mandarin oranges and almonds as toppings.

Kid-Friendly:  Do you have one of those kids that wants ketchup on everything? You are not alone. But, maybe you can introduce them to this as a nice alternative to ketchup. This is the “ketchup” for Lesley’s youngest child so she knows how you feel!
