Ingredients
  • 1 small spaghetti squash, about 3-4 lbs
  • 2 Tbsp unsalted butter
  • 1 tsp minced garlic
  • 1/4 cup parsley, chopped
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder, optional
  • 1/4 tsp Italian seasoning, optional
  • 1/4 cup shredded parmesan cheese

  1. Preheat oven to 375℉ and pierce the squash all over with a sharp paring knife. Bake squash for 60 minutes, or until a fork can easily pierce the skin. Allow to cool for at least 10 minutes.
  2. Cut the squash in half, lengthwise. Scoop out the seeds with a fork and throw away. Then use the fork to scrape out the strands from the squash into a bowl.
  3. Heat the butter in a large skillet over medium heat. Once the butter has melted, add the garlic and cook for about 30 seconds. Then add the squash, parsley, salt, pepper, onion powder, Italian seasoning, and Parmesan cheese. Toss well and cook until heated through.
Recipe Notes

Make Ahead: Bake the spaghetti squash while you are eating dinner the night before and scrape out the strands, then store in the refrigerator until ready to use in this dish.

Chef’s Tip: Short on time? Instead of baking the spaghetti squash for 60 minutes you can cut the squash in half lengthwise, place squash cut-side down on baking sheet and roast for 30 minutes until tender. If the squash is too hard to cut, microwave it for 2 to 4 minutes to soften it first.
