Ingredients
  • 1 cup white quinoa
  • 2 cups water
  • 1 medium tomato diced
  • 1/2 whole red bell pepper diced
  • 1/2 whole green bell pepper diced
  • 1/2 cup carrot peeled and diced
  • 1/2 medium red onion diced
  • 1/2 cup pitted Kalamata olives sliced (reserve liquid)
  • 1 bunch fresh basil roughly chopped
  • 3 sprigs fresh mint roughly chopped
  • 2 ounces feta cheese crumbled
  • 1/4 cup olive oil
  • Juice of one lemon about 2 Tbsp
  • Salt and pepper to taste

Instructions
  1. Combine the water and quinoa in a pot. Bring to a boil, then cover and simmer for about 15 minutes or until the liquid is gone. Set quinoa aside to cool.
  2. In a large bowl combine the tomato, bell peppers, carrot, onion and olives. Stir in the cooled quinoa.
  3. Add the basil, mint, feta, olive oil, lemon juice, salt and pepper and stir to combine.
  4. Serve immediately or chill. May be made up to 1 day in advance.
