Ingredients
  • 4 teaspoons garlic minced
  • 3 tablespoons fresh lime juice divided
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon cumin
  • 1/8 teaspoon ground red pepper
  • 1/2 teaspoon kosher salt
  • 1 15-ounce can black beans rinsed and drained
  • 1 cup canned chickpeas rinsed and drained
  • 1 cup grape tomatoes halved
  • 1/4 cup red onion minced
  • 1/4 cup cilantro chopped
  • 1 medium avocado diced

Instructions
  1. In a large bowl, combine the garlic, 2 tablespoons lime juice, oil, cumin, red pepper, and salt.
  2. Add the black beans, chickpeas, tomato, onion and cilantro. Mix well.
  3. Toss the avocado with remaining 1 tablespoon of lime juice and gently stir into the black bean salad.
