Ingredients
  • cups cooked pearled barley
  • 1 15-oz can chickpeas, drained (garbanzos)
  • 1 14-oz can artichoke hearts chopped
  • 1 cup frozen peas
  • ½ cup Kalamata olives, sliced
  • ½ cup marinara sauce
  • 1 tsp minced garlic
  • ¼ tsp ground black pepper
  • 1 tsp dried oregano

Instructions
  1. Preheat oven to 375°F. Lightly grease a medium sized casserole dish with nonstick cooking spray.
  2. Put all of the ingredients in a large bowl and stir to combine. Pour into the prepared casserole dish.
  3. Bake in the oven for about 20 minutes or until warmed through and golden brown.
Recipe Notes

Chef’s Note:  

  • ½ cup pearled barley cooked in 1 ½ cups water will yield 1 ½ cups cooked barley.  
  • Top with shredded Parmesan cheese if desired.
