Ingredients
  • 1 lb chicken tenderloins
  • 1 leaves head Romaine lettuce, separated and washed
  • 1/2 cup reduced fat Caesar salad dressing, divided
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup croutons

Instructions
  1. Preheat oven to 350 degrees F.
  2. Marinate chicken tenderloins in 1/4 cup of the Caesar dressing for at least 10 to 15 minutes. Put the chicken and marinade in a baking dish and bake for about 20 minutes or until cooked through. Remove chicken from pan and slice into long strips.
  3. Set out the remaining salad ingredients and allow family members to assemble their own salads to their liking.
Recipe Notes

Chef’s Note: When we served this to our own families, we served it “deconstructed” so that the kids could more easily eat the parts they liked since not all kids love salad. For the adults, we put it all together like a normal Caesar salad. But, either way, it tastes great!

Mix It Up: For a non-traditional Caesar salad, add other vegetables like grape tomatoes, cucumber or peppers if your family wants more variety for their salad.
