Ingredients
  • 2 tsp garlic minced, about 4 cloves
  • 1 tablespoon dried oregano
  • Pinch of salt and pepper
  • 1/2 cup red wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup brown sugar
  • 1 cup dry white wine
  • 1 cup pitted prunes
  • 3.5 ounce jar capers undrained
  • 6 bay leaves
  • 1 1/2 pounds boneless skinless chicken breast

  1. Preheat oven to 350 degrees F.
  2. In a shallow 9 x 13 glass baking dish, put in all of the ingredients, except for the chicken. Mix well. Add the chicken, coating it well on both sides.
  3. Bake for one hour or until chicken is cooked through, basting frequently.
Recipe Notes

Make Ahead: In advance, combine all ingredients, except for the chicken, and store in a container in your refrigerator. When you are ready to cook the dish, just add the chicken to the 9 x 13 glass baking dish, pour the marinade on top of the chicken, and bake according to directions above.
