Ingredients
  • 1 lb boneless, skinless chicken breast, cut into small chunks
  • 1/2 Tbsp rice vinegar, divided
  • 3 Tbsp reduced sodium soy sauce, divided
  • 1 1/2 Tbsp hoisin sauce, divided
  • 1 tsp sesame oil
  • 2 tsp canola oil, divided
  • 1/2 medium onion, divided
  • 1 Tbsp garlic minced
  • 1 Tbsp ginger, minced
  • 1 8-oz container mushrooms, quartered
  • 2 heads broccoli, chopped
  • 1 tsp sesame oil
  • 1/4 cup cold water
  • 1 Tbsp corn starch
  • 1/4 tsp ground white pepper (optional)

Instructions
  1. In a bowl, combine the chicken with 1/2 tablespoon rice vinegar, 1 tablespoon soy sauce, and 1/2 tablespoon hoisin sauce. Allow to marinate for at least 15 minutes while the other ingredients are prepared.
  2. In a large pan, heat 1 teaspoon canola oil over medium high heat. Add the onion, garlic and ginger. Sauté for 3 to 5 minutes until onions are soft. Add the mushrooms and broccoli and cook for another five minutes. Remove from pan and set aside.
  3. Heat the remaining canola oil in the pan. Add the chicken with marinade to the pan. Cook until chicken is cooked through. Add the vegetables back to the pan along with the remaining rice vinegar, soy sauce, hoisin sauce and sesame oil. Stir well to combine and heat through.
  4. In a small bowl, dissolve the corn starch in cold water then add to the pan. Bring to a boil and stir until sauce is thickened, about 1 minute. Season with white pepper if desired and serve over brown rice.
Recipe Notes

Mix It Up: This is a great recipe to mix up the vegetables to suit your family’s needs. For instance, add some red or green pepper for a splash of color!

Chef 's Notes: Stirfry dishes are very easy to make vegetarian. Just replace the chicken with an 8-oz. block of tofu or some tempeh.
