Ingredients
For the Dressing
  • 1 cup loosely packed fresh Italian parsley, roughly chopped
  • 10 big leaves fresh basil
  • 1/4 tsp dried oregano
  • 1 tsp minced garlic (about 2 cloves)
  • 1/4 cup red wine vinegar
  • 3/4 cup extra-virgin olive oil
  • 3/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 1/2 tsp honey
For the Salad
  • 1 large head romaine lettuce, washed, dried and cut into large, bite-sized pieces
  • 1 large red bell pepper, chopped
  • 1 cup chopped cucumber
  • 1 cup diced carrots
  • 3/4 cup grape tomatoes, halved
  • 12 pitted Kalamata olives, chopped
  • 3/4 cup feta cheese, crumbled

Instructions
  1. To make the dressing, combine all of the dressing ingredients in a food processor or high-speed mixer and blend well.
  2. Place all of the salad ingredients in a large bowl and mix well. Right before serving, toss the salad with 6 tablespoons of the salad dressing. Keep remaining dressing in refrigerator for another use.
Recipe Notes

Simplify It:

  • You can also buy pre-sliced carrots to throw on the salad.
  • If you are super tight on time, you can always buy a bagged salad and use one of your favorite salad dressings on top of that.
