Monthly Menu favorites for May - what we've been cooking in our kitchens lately

SCHOOL’S OUT FOR SUMMER!!! We hope you are singing that out loud in your car. And if you don’t know that song, well, then you must shazaam it and listen to it as loud as you can stand!! Woohoo!

While we’ve been crazy running around all month as our school year wrapped up, we kept planning our weekly menus. Ann focused on cooking just a few times a week and having enough leftovers to survive the other nights or make really simple meals out of her freezer stash. Lesley’s dinner routine pretty much stayed the same – she’s far more consistent and organized than Ann in that regard, which we discussed last month

While we tried a few new recipes, that may show up here on the blog in the coming month, we also stuck with some tried and true favorites. You’ll probably notice below that breakfast for dinner or “brinner” made a regular appearance at both of our houses! That never fails to please the family and we have so many great recipes to choose from too if you need to shake up your routine.

So without further ado, here is some of what we were cooking up this past month in our kitchens:

Chard & Cheddar Quiche

Lesley made this for a family event and it was a big hit!

Soy Marinated Flank Steak

You can also try the same marinade with chicken and then cook it on the grill. It is yummy and keeps the chicken very moist.

Chicken Marabella

This is one of Lesley’s favorite. She keeps the sauce for later use on just about any kind of grain.

Broccoli & Egg McMuffin Casserole

Hello leftovers and breakfast the next day! Tastes just as good the second time around.

Slow Cooker BBQ Beef Sandwiches

This is a fantastic recipe, not just because of the taste, but also because it makes a lot! The leftovers can be used in a variety of ways like these sandwiches or even as a baked potato topping. 

Turkey Ranch Meatloaf Muffins

These individually sized meatloaf muffins were a hit with Ann’s kids. It was easier for them to handle to have smaller sized muffins than a thick slice.
