Kale Salad with Pomegranates, Pear and Avocado
This is a festive salad for the holidays using pears, pomegranate seeds and sliced avocado.
- 6 cups kale washed and torn
- 1/4 cup of your favorite vinaigrette
- 1 pomegranate, seeded
- 1 pear, sliced
- 1 avocado, sliced
- Place the kale in a large bowl and drizzle with the salad dressing. Rub the dressing into the kale leaves with clean hands.
- Add the pomegranate seeds, pear slices and avocado slices. Gently toss together well and serve.
Mix It Up: You can also add your favorite nuts and/or soft cheese to the salad. Nutrition Nugget: This salad is PACKED with Vitamin A and C and is also an excellent source of calcium. Most people do not think of calcium coming from vegetables but green leafy vegetables, specifically, are a key source of calcium for many vegetarians.
