
Cucumber Ranch Dressing
Ranch dressing is a kid favorite for dipping veggies. Make your own with cucumber for an extra punch of flavor.
Ingredients
- 1/4 cup whole milk
- 1 tsp white wine vinegar
- 1/2 cucumber seeded and roughly chopped
- 2 green onions roughly chopped
- 3/4 cup plain nonfat Greek yogurt
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried dill
Instructions
- Put the milk and vinegar in a small bowl and set aside for 5-10 minutes to allow to thicken. Alternatively, use buttermilk in place of the milk and vinegar.
- Put the cucumber and green onions in a food processor and pulse until finely chopped.
- In a medium-sized bowl, combine the milk, cucumber, green onions and the remaining ingredients. Adjust seasonings to your taste. Chill and serve as a salad dressing or dip for raw vegetables.
Notes
Makes about 1 1/4 cups dressing. For a thicker consistency, add a touch more Greek yogurt.
