
Cranberry, Walnut and Apple Arugula Salad
This is the perfect salad for fall with the flavors of cranberries and apples against the peppery arugula.
Ingredients
- 4 cups arugula
- 1/2 cup dried cranberries
- 1/4 cup walnuts chopped
- 1 apple sliced
- 1/4 cup salad dressing of choice
Instructions
- In a medium-sized bowl, toss together the arugula, cranberries, walnuts and apple slices. Drizzle with ¼ cup of your favorite salad dressing.
Notes
Chef’s Note: Lightly toast the walnuts before adding to the salad for more flavor.
Kid-Friendly Option: If your children are wary of salad greens, try a more kid-friendly lettuce such as romaine that has more crunch to it and a lighter green color.
