
Banana Apple Bran Mini Muffins
Banana Apple Bran Mini Muffins are a great addition to breakfast or for a snack. This recipe is adapted from a recipe in the Petit Appetit Cookbook by Lisa Barnes.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup oat bran
- 1 tsp baking soda
- 2 Tbsp ground flaxseed (optional)
- 1/2 tsp salt
- 1/2 cup butter, unsalted melted
- 3/4 cup applesauce
- 3 medium bananas 1 mashed (about 1/2 cup), 2 sliced
- 1/2 cup packed light brown sugar
- 2 large eggs
Instructions
- Preheat oven to 350°F. Spray a mini muffin pan with cooking spray.
- Combine flour, bran, baking soda, flaxseed, and salt in a mixing bowl.
- In a large bowl, mix together the melted butter, applesauce, mashed banana, brown sugar, and eggs.
- Add flour mixture to applesauce mixture and stir until just blended.
- Spoon batter into prepared muffin pan, filling two-thirds full. Place banana slice on top of each muffin.
- Bake mini muffins fo 12 minutes (or until golden brown) or for regular muffins bake 15-18 minutes.
- Cool muffins on a wire rack for 5 minutes before removing from the pan. Serve immediately or cool and store in an airtight container.
