Banana Apple Bran Mini Muffins

Banana Apple Bran Mini Muffins are a great addition to breakfast or for a snack. This recipe is adapted from a recipe in the Petit Appetit Cookbook by Lisa Barnes.

  • 1 cup whole wheat flour
  • 1/2 cup oat bran
  • 1 tsp baking soda
  • 2 Tbsp ground flaxseed (optional)
  • 1/2 tsp salt
  • 1/2 cup butter, unsalted melted
  • 3/4 cup applesauce
  • 3 medium bananas 1 mashed (about 1/2 cup), 2 sliced
  • 1/2 cup packed light brown sugar
  • 2 large eggs


  • Preheat oven to 350°F. Spray a mini muffin pan with cooking spray.
  • Combine flour, bran, baking soda, flaxseed, and salt in a mixing bowl.
  • In a large bowl, mix together the melted butter, applesauce, mashed banana, brown sugar, and eggs.
  • Add flour mixture to applesauce mixture and stir until just blended.
  • Spoon batter into prepared muffin pan, filling two-thirds full. Place banana slice on top of each muffin.
  • Bake mini muffins fo 12 minutes (or until golden brown) or for regular muffins bake 15-18 minutes.
  • Cool muffins on a wire rack for 5 minutes before removing from the pan. Serve immediately or cool and store in an airtight container.
