Ingredients
  • 2 lbs pork tenderloin
  • 1/4 cup lower sodium soy sauce
  • 1 1/2 Tbsp yellow mustard
  • 2 Tbsp extra-virgin olive oil
  • 3 Tbsp maple syrup
  • 1 shallot, chopped
  • 1 tsp onion powder
  • 1 1/2 tsp garlic powder

Instructions
  1. Place tenderloin in the slow cooker.
  2. Put the remaining ingredients in a small bowl and whisk together until blended.
  3. Pour marinade over the tenderloin and cook on low for about 5 to 6 hours.
  4. Slice and serve

Chef’s Note:  To keep the pork tenderloin well coated with the marinade, turn it every 2 to 4 hours if you prefer.
