Ingredients
  • 1 12-oz package frozen chopped spinach, thawed and squeezed dry
  • 1 cup sharp Cheddar cheese, shredded
  • 1/3 cup Panko bread crumbs
  • 1 egg
  • 1 lb cod fillets
  • Salt and pepper to taste

Instructions
  1. Preheat oven to 350 degrees F.
  2. 2. In a bowl, mix together the spinach, ½ cup Cheddar cheese, and 5 tablespoons dry bread crumbs, and the egg. Spread the mixture into the bottom of a small baking dish. Arrange the cod fillets on top of spinach mixture, and season with salt and pepper. Top with the remaining Cheddar cheese and bread crumbs.
  3. Bake for 30 minutes in the oven, or until fish flakes easily with a fork. If the cheese and bread crumbs begin to brown too much, cover with foil.
