Ingredients
  • 1/4 cup red onion, finely diced
  • 1 tsp garlic, minced (about 2 cloves)
  • 1 15-oz can no salt added black beans, drained and rinsed
  • 1 cup fresh or frozen corn kernels, thawed
  • 1/2 cup orange (or any color preferred) bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 2 Tbsp extra-virgin olive oil
  • 3 Tbsp fresh lemon juice

  1. Combine all ingredients in a bowl and chill before serving.

Chef's Note:  If using fresh corn kernels, steam or grill the corn first, then cool and add to salad.
