Ingredients
  • 4 oz udon noodles
  • 1 1/2 cups shelled edamame
  • 2 Tbsp peanut butter
  • 2 Tbsp lower sodium soy sauce
  • 4 tsp lime juice
  • 1/2 tsp lime zest
  • 1 Tbsp sesame oil
  • 1/4 tsp black pepper
  • 1 medium yellow or red bell pepper, sliced
  • 3 medium green onions, sliced
  • 1 Tbsp sesame seeds or crushed peanuts

Instructions
  1. Bring a large pot of water to boil and cook the noodles for 10 to 12 minutes or until tender. Before draining, reserve ½ cup of the cooking water and set aside. Drain noodles.
  2. Cook edamame in the microwave according to package directions.
  3. In a small bowl, stir together the peanut butter, soy sauce, lime juice, lime zest, sesame oil, black pepper, and reserved cooking water.
  4. Toss the noodles with the sauce, cooked edamame, bell pepper, and green onions. Sprinkle sesame seeds or crushed peanuts on top and serve.
Recipe Notes

Chef’s Notes:

  • If preferred, lightly sauté the bell pepper in a small amount of oil before adding to the noodles.
  • This dish could be eaten at room temperature or even cold.

Mix It Up: Add any combination of vegetables you want or have on hand to the noodles. You could also mix in some tofu or tempeh. Add chicken if you are looking for a non-vegetarian main dish.

  • Mix up udon noodles and their favorite spaghetti so they have a noodle combo.
  • Serve it with their favorite whole wheat spaghetti, instead of udon.
