Ingredients
  • 2 whole mangos, chopped
  • 2 scallions, chopped
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp fresh lime juice
  • 1/4 tsp crushed red pepper
  • 3/4 tsp kosher salt, divided
  • 2 lbs pork tenderloin
  • 2 tsp ground coriander
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions
  1. Preheat the oven to 375 degrees F.
  2. In a medium bowl, combine the mango, scallions, oil, lime juice, crushed red pepper, and 1/4 teaspoon salt. Set aside.
  3. Season the pork with the coriander, 1/2 teaspoon salt, garlic powder and onion powder.
  4. Put the pork in a roasting pan coated with cooking spray. Cook the pork in the oven until the desired degree of doneness, about 15 to 20 minutes. Let the pork rest for 5 minutes before slicing.
  5. Slice the pork and serve with the salsa.
Recipe Notes

Chef’s Note: The leftovers are great over a salad the next day for lunch or another dinner.

Simplify It: If you want to cut corners, buy some fresh mango salsa in the deli section of your supermarket.
