Breakfast for dinner, or “BRINNER”, is the bomb in my house! Not only do my kids like it, they LOVE it. And, for me, I love it too because I know I am going to have a hassle-free dinner with smiles all around. Yippee!!
Our usual Brinner is my killer Whole Grain Pancake Mix with some scrambled eggs and fruit. But, deep down inside, this sort of bothers me sometimes because my kids like to load on the syrup and then I keep thinking about the sugar. And, then, I know they are going to ask for dessert and we all know where that ends when I tell them “No!”…WHINING! Truthfully, dinner is the best time of day for me to get my kids to eat vegetables so I really try not to miss that opportunity.
I needed a new plan of attack that I felt could include a vegetable which meant that I needed something that was more savory. So, I decided to make their other favorite recipe, my Baked Omelet Roll, and combine it with my new and savory muffin recipe, Mexican Sausage Cornbread Muffins. I could put vegetables in the Baked Omelet Roll and/or add a side of broccoli, a salad, or some other green veggie that my kids like. And, boom, I got the perfect brinner on my hands!!

I am really happy with the way the muffins turned out. They were definitely savory and the chipotle sausage gave them a bit of a kick. If your kids do not like anything spicy, you could also use regular sausage and they will be just as good. These muffins are totally mouth-watering. It’s funny how the brain does that when it knows something really yummy is coming!
